Tomatillo Enchilada Recipe

Happy 2012 -

This week I have had the pleasure of visiting with my friend Steve - over lunch while eating his delectable taquitos - he mentioned an enchilada recipe that I just had to have. He generously offered his culinary knowledge and I suggested we dinner. Last night we enjoyed that recipe and it was absolutely scrumptious.

Steve Eddy's Tomatillo Enchiladas

10-15 Tomatillos

5-10 Jalapenos

2 Garlic Cloves

Olive Oil

Corn Tortillas

Cheese

16 oz Black Olives

Limes

Salt and Pepper to taste

Husk and wash the tomatillos and cut in half. Cut the tips off the Jalapenos (if you desire you may seed and remove the veins from them - I did not) and cut in halves. Husk and clean the garlic. On cookie sheets line with foil and place all the veggies cut side down. Spray with Olive Oil, sprinkle salt and pepper over their tops. In a pre-heated oven of 375 bake for 30 minutes (except the garlic - they are ready in 15 minutes - overcooked garlic tends to bitter). When all are done - blend together until a smooth consistency - remember to utilize all the liquid exuded in the baking process. Thereafter i placed in a stock pot and brought to a boil and simmered for about 20 minutes - stirring very often. While that is simmering grate your cheese (I used sharp cheddar), dice your olives, and slightly toast your corn tortillas on a griddle or over a gas flame (careful not to burn yourself). In a casserole dish (we used glass) - place a small amount of the sauce to coat the bottom and sides of the casserole dish, fill and roll your corn tortillas with desired amount of cheese and place them tightly into the dish. When all casseroles are filled - with the remaining sauce - we added filtered water to double it and brought it back to boil. Thereafter we smothered the rolled enchiladas with the remaining sauce (remember to divvy it up so that all get smothered) add a layer of grated cheese. Cover with foil and place in a 325 oven for 30 minutes or until most of the liquid has been absorbed into the enchiladas (don't dry them out). Serve hot with desired sides - I served with black beans that I pressure cooked (took 1 hour) and home made cornbread.

Bosque del Apache National Wildlife Refuge

Brad and I began our adventure early Monday morning. We were warned of the possibility of running into inclement weather conditions - some thought we were crazy. As we traveled further and further south, the snow seemed to increase, we saw and traversed on some really scary roads. When we finally arrived at the Refuge, it was blizzard like conditions, wind, snow falling and accumulation. It was absolutely beautiful, and the cranes were a joy to behold, with their large wing span, elegant movement and they make the most amazing coo. We were both spellbound and enchanted. This will definitely become an annual event for me.

Sweet Potato/Pumpkin Pie Recipe

This Thanksgiving I joined my family at my sisters house - everything was delectable. My contribution were the Sweet Potatoe/Pumpkin Pies. Following is the Recipe,I hope your friends and family will enjoy them as much as mine did.

1 (29 ounce) one small fresh winter squash (I used an heirloom)(Bake 375 Degrees until soft)
3 (30 ounce) three fresh sweet potatoes (not yams)(Bake 375 Degrees until soft)
1 (12 ounce) can evaporated milk
4 large eggs
2 teaspoons cinnamon (I combined whole spices in my spice mill then added)
1 teaspoon allspice
1 teaspoon nutmeg
3/4 cup dark brown sugar
1/2 cup white sugar
1/3 cup maple syrup or 1/3 cup a good quality pancake syrup
2 teaspoons pure vanilla extract
2 deep dish pie shells or 4 regular pie crusts
whipped cream or vanilla ice cream, to serve with pie

Directions:

Process sweet potatoes and pumpkin well. In a large bowl combine and mix well pumpkin & sweet potatoes, milk, eggs, spices, vanilla, sugars, and syrup. Mix until thick ,creamy and well combined. Pour into pie crusts. Bake in a preheated 425°F oven for 15 minutes. Then lower temperature to 350°F and bake for 45 minutes longer. Remove from oven cool completely. Serve with ice cream, and/or whip cream. Enjoy!

Rockwell Museum Permanent Collection

Gill-Tapia Studio's is very, very happy to annouce the recent acquisition of San Franciso De Asis - Ranchos de Taos, by the Rockwell Museum of Western Art in New York. It will remain in their permanent collection and was unamously voted in by the board. It is Gill-Tapia's largest painting to date measuring 8 feet by 4 feet, and was part of their recent exhbition "21 Century Regionalist Art of the Next West. Please visit the Museum if you find yourself in that neck of the woods.

Tomorrow - May 19, 2010 marks the opening of the Rockwell Musuem of Western Art's - 21st Century Regionalists: The Art of the Next West Exhibition. Gill-Tapia Studios is Proud to announce that three Gill-Tapia pieces are included. The eight foot "Ranchos de Taos - San Francisco de Asis", four foot square "St. Anthony - Zuni" in gold leaf and Santa Fe's very own and the Nations oldest Mission "San Miguel" also in four feet square. This exhibition runs from May 19th 2010 to January 9, 2011.

A catalog has been published with Essay by Sheila Redman Hoffman and Dr. W. James Burns - my thanks and appreciation go out to both Sheila and James for their hard work and organizing of such an exhibition that includes my paintings.

Pictured is Zuni Mission - in Goldleaf - and we are happy to announce that during its short time on exhibition at Firegod Gallery (217 East Palace, SFNM), it found a new home. It was selected by Sheila and James (Curators for the Rockwell Museum)for the Rockwell Museum's Exhibition being hung in May and will remain on exhibit through 2011. Thereafter it will find its way to France - it's new permanent home. We are thankful for the understanding and patience of the clients, and their agreeing to lend it to the Museum.

Los Angeles -

Our trip to Los Angeles was spontaneous and filled with fun times, excellent food, loved ones, friends and family. I am thankful to Joey's prodding for an mini escape from Santa Fe's cold snowy winter.

Trish and Lani provided us with a home full of excellent food, and generous on the love. It was wonderful to have old and new friends/family all come together for an evening of happiness. 180 Dumplings later - 0 left and some scrumptious red velvet cupcakes we all had smiles.

Our day in Pasadena to see the Gamble house was enlightening and followed by a visit to Malibu/Zuma Beach - for our beach fix.

The obligatory sushi fix in WEHO, followed by fun times at East/West and some dancing at Rage - fun times at The Abbey and some other places - who can remember them all hehe.

Green Chile Stew Recipe

Home alone one night I decided to put together a Chile Stew for the following evenings dinner. One is always told that stews are always better the next day. This recipe is a combination of several peoples good stews plus my secret ingredient....

3 LBS - Chicken Breast
4 Small Snack Size bags of frozen chopped green chile (we process our own every year - but one can use what is readily available)

Salt, Pepper and garlic powder to taste
14.5 OZ can of crushed tomato
5-8 good sized potatoes
Two Boulillion Cubes (Poultry in this case)
Secret Ingredient :)

Begin with dicing the chicken into small cubes - using a Dutch Oven or deep pan(pot should be able to accomodate all ingredients) - Season the raw chicken with the garlic powder, salt and pepper - to your taste and brown. When the chicken has reached your desired state - add the diced potatoes(cut to your size preference) and stir thoroughly, to that add the thawed and diced green chile - once again stir thoroughly over the heat for approximately 30 seconds or more - followed by adding the can of diced tomatoes and its juice. Finally top off with filtered water to just above the top of your ingredients. Bring to a boil and add your bouillion cubes - lower the heat and simmer partially covered for approximately 1.5 hours or until your potatoes are tender and cooked.

I like to serve with warm flour tortillas. - ENJOY!!!!

Gordon's show was very well received and we all had a good time.

This time we dined at Malee's (Four Times), The Rokery, Tico'z, & Oreganos. Oregano's as usual was FAB - the pizza is absolutely my favourite. Tico'z came highly recommended by Doug at The Royal Villa - the servings were gigantic, serivice was attentive and friendly - there is an attached bar - all very fun. The Rokery turned out to be very good, they were having a Dinner for two special - ours included a Porterhouse Steak - huge and juicy, accompanied by a potato suffle, and three veggies - and believe it or not it also included a Salad. When we got there - we were going to have to wait eventhough we had reservations - the owner was there and placed us in a private room - good friends, good food and lots of nectar flowing... Malee's this time proved to be our faithful and convenient restaurent - located on Main Street - Scottsdale and next door to the Gallery (Joan Cawley Gallery) - I will say that each time I had somthing different and each time it proved to be excellent - Excellent Shrimp Satay, The Pla - YUMM fish plate, Stir Fry. ONe evening we decided to share desserts - at Marilynn's insistence - WOW they were yummy my favourite was the Sticky Brown Rice with Custard -mmmmmmmmmmmmmmm

The night life too was decidely "amazing" - made new friends and enjoyed old ones.

Looking forward already to our next trip there.

Laguna Beach

Wow what a SUPERB day - with Bry, Trish and Lani - it began with a sunny warm day, a walk on the beach and meeting at the Crab Zone for lunch. Crab was had by all with Lani and Bry enjoying each a whole fresh dungeness crab - meticuliously prepared in a wok with crispy garlic and butter sauce.... WOW - they had their work cut out for them but they got through it. Trish and I settled for the King Crab Legs mmmmmmmmmmmmmm they sure know what they are doing. BUT it all began with Calimari and Oysters on the half shell - all excellent. Our entrees were accompanied with noodles - that seemed home made, the texture of each noodle smooth as butter...

We walked, talked, shopped and enjoyed our afternoon cocktails at Brussels Bistro - Bry and Lani couldn't resist some amazing desserts....

And finally a nice, peaceful walk on the beach at sunset....

Our trip to Scottsdale/Phoenix was filled with constant activities - from the minute I drove in. Hanging the show at the gallery, Museums, Restaurants, Friends, Clubs - finally we (Dennis,Myron, Megan, Bryan, and I) escaped to Cave Creek and lunch at El Encanto - Everyone left with a very full tummy - YUMM.

Other Restaurants included Salt Cellar - Excellent Sea Food and Service, Wally's II with Dee and Jack - had a FAB Burger - Dee had amazing Ceviche, Oregano's - My favorite pizza in the US - that is for sure - and I have had allot - we lunched that day with Will, La Grande Orange - Bry and I did Breakfast - his Poached Eggs were very good - but my egg sandwich seemed like it was stored in the freezer before it was placed on my plate, Malees - many say best Thai cuisine in the Scottsdale/Phoenix area... I would have to agree - I liked that they offered everyone a specific spice level and finally Olive and Ivy - always love the atmosphere.

The New Year was a busy one around Gill-Tapia Studios - between all the Holiday Parties and preparing for my show at Joan Cawley Gallery in Scottsdale.... There wasn't a minute to be spared. AND - WE got through it - the show was a success, my new works were met with high regard. The gallery has requested one of my large 8'X4' paintings.... I have my work cut out for me - as I plan on delivering it in March.

We intalled one of my pieces while in Scottsdale. The clients were absolutely kind and generous - the painting was placed in an important spot that no guest of theirs can possibly miss. It is an honor to be in such a noteworthy home and collection.

I'll be posting images from the last weeks over the next few days... and hope to get back to some recipes too.

Cindy's Restaurant in St. Helena was so much fun - a plethora of fine appetizers - including clams & mussels quickly arrived at the table - the friendly efficient staff were there for our every whim and entertainment. Bryan couldn't resist the Oysters - YUMM, I had their vegetarian tamale - sooooo scrumptious. Kurt and Richard brought a bottle of wine for us to share, the evening was filled with laughter.

Well - it has been a while since my last post to the Blog - We have been soooooo busy...

Bryan and I were in Scottsdale in November for Fashion week - Gordon and I had two of our Denim jackets in an exhibition at Joan Cawley. We stayed at Zen Yard - and had lots of fun. Megan joined us for some poolside wine and cheese - and later we watched some fire spinning - and night out at Amsterdam.... Wow!

This year for Thanksgiving Bryan and I visited his family in Sacramento for the big feast - but prior we spent a couple days in Calistoga/St. Helena/Napa - we stayed at Meadowlark in Calistoga - Wow what a place - tree covered property with many rooms and bungalows to choose from. The pool and jacuzzi were exactly what we needed. Thanks to Kurt and Richard we dined at Cindy's and met some nice people - I was especially thankful for the tranquil beauty (as Bryan actually relaxed) and I found so much subject matter for some non-figurative photos. SWEET!!!!!

We then spent a couple of days in the Sacramento area - which included Thanksgiving dinner with the Gill Family - Bryan jumped right in and helped his mom and dad prepare a scrumptious dinner - we escaped leaving the dishes to his siblings and went out on K Street - a plethora of clubs and restaurants to pick from - we had a BLAST! A couple of restaurants we visited with Bryan's parents - Luccas - Italian Cuisine in a casual atmosphere - known for the Governor of CA sightings.... food and service was good - BUT I think the restaurant could use an update. Another place was Bistro 33 - Excellent service, food, and atmosphere - I had the Kobe Beef Steak - YUMM and Bry the Crab Risoto - he loved it - and the desserts were super fine.

Finally we escaped for a day in San Francisco - which included a visit to the Transamerica Building, Telegraph Hill, Fishermans Wharf, The Ferry Building (a contemporary farmers market), and of course glorious food. Who could resist the scrumptious Boudin Sourdough - MMMMMM was it delectable. Ghirardelli Square was beautiful - the view even better and Victorian Park was SWEET as chocolate. We walked and walked and loved and loved our time there. Many photos and lots of food we dined at the Eagle Cafe at Pier 39 - nice casual surrounds, friendly - efficient staff and the food excellent - Bry had the Crab Melt and loved it and I Alaskan Cod - YUMM!

Spinach Meatloaf Roll Recipe

This delectable dinner was such a joy watching being made - Jay and Gordon's joint venture in Spinach Meatloaf Role. Accompanied by a baked potato and followed with a Lacota Squash dessert - we had a scrumptious dinner.

Ingredients:

1 1/2 LB Ground Beef
1/2 LB Sausage
6 Slices Thick Cut Bacon
2 Eggs Divided
1 C White Onion Chopped
1/2 Cup Celery Chopped
1/4 C Bread Crumbs
Sprinkle with herb mixture of your liking
Salt and Pepper to Taste
1 PKG Frozen Spinach
12 Slices of Cheddar Cheese
1 CUP Blue Cheese Crumbled

In a large bowl, combine all ingredients except the spinach and cheese, blend well. Put down a couple sheets of wax paper - a space approximately 19X16 inches. Spray wax paper with cooking oil spray. Place meat onto wax paper and spread out to make a rectangle a little smaller than the wax paper. Evenly spread and place slices of cheddar cheese. Spread the well drained spinach that has been mixed with one of the egg and the blue cheese. Roll slowly and gently as you would a jelly roll cake - remembering to remove the wax paper as you go. When you get to the end, tightly seal all edges. Place seam side down into a greased baking dish lined with the bacon slices. Wrap the roll with the bacon. (Jay used a nice ceramic one). Cook in a preheated 400 - degree oven for 30 minutes. Reduce heat to 350 degrees for the rest of the cooking time - 35- 45 more minutes. Allow to rest before cutting.

Aspens in Santa Fe

Nathan and I trekked up Hyde Park Road all the way to the Ski Basin on Thursday. The weather was perfect, the views were gorgeous and we decided at the last moment to take the ski lift - it's slow moving, but well worth it.

Today is bread day..... I'll post the results later this week.

Jay's Pickled Green Tomato Recipe

Yesterday was a busy day - part of what included pickling - utilizing Jay's famous recipe for Pickled Green Tomatoes. Please see the recipe below - we had a bumper crop of tomatoes this year - in addition Jay made green tomato relish and a beautiful green tomato pie.

Ingredients:

Green Tomatoes
2 Quarts Boiling Water - may vary depending on the amount of tomatoes you use
1 Quart Apple Cider Vinegar
1 Cup Kosher or Pickling Salt
1 Teaspoon Mixed Pickling Spices for each Jar
Dill - to your taste

Prepare your jars and lids by boiling in water. Separately bring your pickling water to a boil and add the vinegar and salt, boil for five minutes.

Place one clove garlic, bunch of dill and spices into the bottom of each jar.

Pierce tomatoes with fork and pack in jars. Place one clove of garlic and dill on top. Fill jar with boiling liquid and seal.

Patiently stand by for six weeks - thereafter open and enjoy… YUMMMM

Fly Fishing in Pecos

Arriving in Pecos we needed lunch - so I directed us to the Pecos Market - as we drove in to the parking lot I re-counted childhood memories of visiting that market with my grandparents. Nathan and I were both impressed with their meat counter - cut fresh daily - WOW - Pecos residents that eat meat are spoiled. We decided next fishing trip we'll schlep the mini grill and make our lunch or dinner. But that day we had to settle for deli sandwiches from the gas station next to the Market.... Lets just say sustenance -

The weather was chilly in the beginning but once we suited up in our waders - all was warm and toastie. Fishing and a little hiking - what a day, I can't wait to return - and we'll have to be back soon - before the chill of winter settles in.

Green Chil Day, Roast Beef Sandwiches, Calabicitas & Melon with Ice Cream for dessert

Yesterday was a busy day - Thanks to Mary Ellen and Natalia - we plowed through processing two sacks of Big Jim - Green Chile. My day began bright and early and I was the second person at the market and chile roasting at Lowes Market. Allowing for steam time - we sat down at the table, surgical gloves on, bowls of rinse water at the ready and lots of empty bowls for the peeled chile. Lots of chit chat and good music kept us motivated. Natalia (thank you), when all the chile were done being peeled, Nat - took the position of "official chopper" to my exact requirements (small), while Mary Ellen and I filled snack baggies and quickly got them into the freezer. Thanks again guys....

A couple hours of rest and on to welcome Richard and Nathan for dinner. That morning at 6:00 am I had put a boef roast into the slow cooker - on low and periodically flipped it through out the busy day - it sat on a bed of chopped onion, sliced fresh tomato, and fresh picked New Mexico apples. The aroma saturated the house, yummy - the plan was to shred and make sandwiches. More of the glorious vine ripened home grown tomatoes sliced and readied for garnish, as well as some fresh lettuce, and goat cheese to top it all off (thanks for the Sage Bakery Farm Round - Richard). As a side I felt it appropriate to include some chile dish - and calabacitas alla Alice Tapia - young "mexican squash" (really - juvenile winter squash), corn off the cobb, a bag of (fresh green chili), onion, a little heavy cream and topped with Mozzarella cheese at the last moment. Richard was kind as to say - "they made his TOP 10" of calabicitas he'd had. If you desire the recipe please email me - gilltapia@yahoo.com. As our finale we had fresh (home grown) heirloom melon, diced and served over vanilla ice cream with a little bit of port over the entire thing - Smiles were on all of our faces.

And finally - the last image - was Richard's show and tell - this little beauty was raised at Jemez Pueblo and was gifted to him via his Mother - in - law. If anyone out there knows what variety of squash this may be please comment or email. It sure is a beauty - we are gonna leaf through Amy Goldman's "The Compleat Squash" later. Additionally if anyone would like some Marina de Chiogga - Winter Squash seeds - let me know and with your SASE - I'll send some your way.

Now Nathan and I are off to Pecos for some mountainous re-charge and fly fishing.

Santa Fe Harvest

This weekend the weather was perfect, and the vegetable garden was begging to be put to rest for the season. Tomatoes both ripe and green by the bucket full and watermelon.

Also this weekend I processed Winter Squash - one a gift from Richard's garden in Tome (we think its a sugar sweet - orange one) and a much prized Chioggia (large green one - from the the farmers market). Per Richard's advice - I baked them halved, opening down on a cookie sheet in a 350 degree oven, processed them and filled five Food Saver bags for freezing. I see squash ravioli in our near future, among other yummies. Additonally all the Lemon Cucumbers were carefully washed and sliced along with one Armenian Cuke - and made into Pickles. My first attempt at pickling... if they are good - I'll post the recipe.

Harvest Pizza

Following Molly Wizenberg's advice - I saved the left over Leek Confit from the Tarts and utilized them in last nights Harvest Pizza. Nathan joined us for a great dinner and evening.

The other day when I was at Whole Foods I came upon fresh pizza dough in the refrigerated section - fresh from their pizza deli. I have been reading (like a novel) a bargain bread book I picked up at the Library Sale and trying to muster the courage to attempt dough... BUT Whole Foods has saved me - regarding the pizza dough anyway. Yester morn - I harvested a large quantity of ripe tomatoes, cucumbers, green chili, and various other yummies and thought it would be nice to utilize the tomatoes sliced on top of the pizza. I was able to convince Bryan to roll the pizza dough for us and I did the rest. Two pizza, crust rolled thin (thanks Bryan), fresh garden tomatoes, thinly sliced garlic, the LEEK CONFIT and Mozzarella. Into a hot oven for 25 minutes and WOW - what a simple, quick and tasty meal we shared.

I have loved Leeks since the day I stepped foot in Brussels - all those years ago. This versatile Veggie is much adored and utilized in Belge cuisine. When I came upon this recipe in the October issue of Bon Appetit Magazine - I was inspired. As indicated I began with the Leek Confit - on my visit to Whole Food's I found some of the freshest Leeks in Santa Fe, while there I decided to shortcut this recipe and purchased a two pack of pre-made corn meal tart crusts (ready to go) - the only set back was I couldn't quite use as much of the filling as was called for. Jay's Fried Plantains Recipe - Great Appetizer

Jay's Fried Plantains

1. Cut Green Plantains into about one inch pieces.
2. Heat cooking oil of your choice and flash fry them.
3. Allow for the excess oil to drain from the flash fried plantains.
4. With a rubber mallet or press - flatten each piece between parchment paper.
5. Fry the flattened plantains the 2nd time until golden, salt to taste and serve.

These make for a fantastic appetizer, quick, easy and tasty.

Santa Fe was buzzing this last weekend - Indian Market Weekend. Bryan and I joined Mark, Gordon & Jay at 5AM for breakfast at the Plaza Cafe, which is where I shot the neon clock as we were dining. Thereafter we toured the booths, it was still dark - and we joked we should have brought a flashlight and minutes later we saw that infact many early birds do bring theirs. Our eyes were dazzled by some of the finest Native American works in the Nation. Running into old friends (Yolanda, Andrea, Janie) and enjoying the food booths filled our day with smiles.

The Pine Owl pictured was a rescue, we came upon him after buying a couple of Lowden and Ortiz clay Owls for our collection. I thought it apropo and wanted to show this beautiful bird. He is used in educating the public about our native species.

Yesterday was another expedition in fly fishing - this time fishing the Pecos River exclusively. The season has really begun… many locations that are closed for the winter season, are now open. Our day revolved around trails that bite, beautiful mountain vistas, excellent fast water fishing and more beautiful sites that one tries to absorb for their times in the city.

On our return we were rewarded with a multitude of Elk and Deer sightings.... WOW they are magnificent creatures.

Nathan had several bites and one catch - I tried to improve my skill in the art of fly fishing. Fresh air and beautiful scenery….. what a pleasure!

Adventures In Fly Fishing

Our adventures in Fly Fishing - Nathan and I braved the imposing dark grey clouds and chilly weather for my first lesson in Fly Fishing. Our destination was the beautiful Pecos River and finally the Mora River.

I learned very quickly the day before our trip just how friendly and willing to teach fisherman are. While I was shopping for my gear - I was quickly given advice by most anyone in the vicinity - information regarding the type of rod necessary for the type of conditions, the type of flies used for the particular season and some sharing their secrets of where and when is best to find those biting trout. Nathan's buddies and I guess now mine - over at Reel Life in the San Busco Center - are always willing to lend advice and guidance - with their friendly smiles and attitude - thanks Ed and Aaron.

Upon our arrival in Pecos - Nathan had the daunting task of teaching me some of his skill in knot tying - a most important part of fly fishing. Three quarters of an hour later - after carefully listening and watching through the tying process, I was shivering and Nathan's fingers were numb from the cold. The previous day I was advised to bring several changes of clothing, as the weather can change from minute to minute. I was thankful for that friendly advice as I quickly added clothing for warmth.

We fished the Pecos River for a spell, I trying to hone my skills by practice & watching Nathan cast - utilizing what is called wet fly fishing - as the speed and depth of the spring run off requires. Thereafter it was off to Nathan's secret gem - I have sworn not to reveal the GPS coordinates of this most beautiful location - it was I will say a treacherous trail that proved to be fatal for one highly adapted Elk that fell to its demise. It was just at the most dangerous point in the trail too - where I found myself slipping down and grasping for treading on this very beautiful vertical rock wall. I quickly realized the importance of waders in fly fishing - it appears that it is to the fisherman's benefit to be in the river where one is casting, but also for traversing around impassable points in the trail - you can just walk right around through the river and that is exactly what Nathan did.

I am looking forward to our next journey and experiences in Fly Fishing. Thanks for you patience and guidance Nathan!

Nat's 28th on the 28 also known as her champagne - was quite the evening. We met up with her party at El Meson, taking a couple of tables in the bar area we enjoyed a plethora of fantastic Tapas, the Mussels were really a hit as well as the shrimp with garlic - and a few libations. Spending time with Carla, Link, Ruth and Rachel was lots of fun. We moseyed on over to Amavi to listen to the enchanting guitar of Mike (thanks Marcey) and continued to have a most jolly of times in celebrating Nat's important birthday.

Also last week was Ian's Friends of Dorothy gathering…. What a smart idea - exactly what Santa Fe needed…. Thank you for coordinating Ian and we look forward to making this warm tradition a reality again. Thanks to you too Caroline… your warmth and smile are always a pleasure. Santa Fe's Friday Gallery Walk

Last Friday Gordon, Jay and I did the Santa Fe Gallery Walk - beginning with unTRAINed - a train box car gallery. Great IDEA, good art and good friends coming together to celebrate and exhibit ART. Keep up the good work Clark and Mark - we are looking forward to the next one.

We also saw a great show at Santa Fe Clay - where we ran into Charlotte, she proceeded to sneak us into Gina Fowler's studio - as usual her work is super.

While we were at Jane Sauer's Gallery on Canyon road we chatted with Michael Bergt just after seeing his fantastic exhibition there - also on exhibit is Geoffrey Gorman's sculpture - Jay and Gordon just couldn't resist "Simus" see the image above. It will make a great addition to their collection.

A little more on Scottsdale - There is a fantastic ceramic exhibition at the ASU - Museum - featuring the Besser Collection - http://asuartmuseum.asu.edu/besser/index.html

Also the Pueblo Grande Museum featured the meticulous works by Michael Hampshire in their current exhibition. http://phoenix.gov/PUEBLO/pueblo7.html We attended the very well attended opening last Thursday.

While there I photographed the landscape in and around Camel Back Mountain/Paradise Valley. The Saguaro Cacti are impressive to stand amongst - we also picked fresh gigantic lemons, oranges, and found a grape fruit stand down the road - that functions on your honor system - two dollars dropped through a slot in a lock box - for a full bag of YUMMY grapefruits. I'm already looking forward to my return in April.

The crabs pictured above are waving hello from the Asian Market - they had tanks full of all kinds of fresh fish - and lines of people waiting to order. We waited our turn for a two pound lobster.

While I was there we were lucky to catch the Parada del Sol - Parade with well over 1,000 horses - according to the MC this parade holds the title of most horses in any parade in the US.

Ranchos de Taos

Yesterday (Monday) - I recruited my sister to assist me in delivering my largest painting (8 Feet X 4 Feet) and my smallest (4 Inches X 4 Inches) to Michael McCormick Gallery in Taos. A cargo van was required so I contacted trusty Enterprise Car Rental on Cerrillos Road - where Bogart delivered expeditious and courteous service - thanks Bogart. The drive to Taos is always enjoyable and beautiful, as was this drive.

The weight of this large painting proved to be difficult in mounting. The 50LB gauge picture wire I affixed snapped like twine - much to my consternation - luckily we tested it before mounting it on the wall. Michael had in his supply closet a very heavy gauge that worked perfectly. He pulled out his scale and the painting weighed in at 53 LBS - which he exactly guessed before. We laughed at how those three extra pounds caused the 50lb gauge wire to exceed its limit - Nathan later reminded me that in reality the pound gauge is a base but usually far exceeds it. I'll have to talk to the guys at Artisan… Thereafter the painting went up and we all stood back for our ahhhh moment. Thanks Michael and Mary Ellen.

Michael surprised me with his galleries recent feature in Taos Magazine, written by Ramsey Scott it details Michael's years in the Taos art market and I was given a mention with inclusion of an image, my "San Esteban del Rey, Acoma" piece. I quote Scott Ramsey, "On the North Wall I found a collection of early northern New Mexico churches by the precociously talented Alvin Gill-Tapia. I wondered about the Martinez women and if they had knelt and prayed in those very churches."

En-route back to Santa Fe, both Mary Ellen and I were reminded by my noisy stomach - we needed food. She had remembered on the way to Taos of a Gourmet Magazine featured restaurant in Embudo(NM) - Sugar's. Driving the winding road from Taos we were careful not to pass it, a simple, un-pretentious, tin clad kitchen with a long portal and a walk up window. We were pleasantly greeted after studying the menu - mounted on the side of the exterior wall, proudly on that same wall was the feature in Gourmet Magazine. I ordered their namesake burger, and shared an order of onion rings, the burger dressed with green chili, bacon, and mushrooms was a WOW, we both enjoyed our food. Sitting outdoors or in the auto were our only options, we selected a nice table in the sun under an apple tree. Luckily our December day was warm and beautiful, soaking in the rays of New Mexico's sun - we enjoyed the landscape and watched the billowing smoke from Sugar's Smokers.

World Aids Day

Santa Fe is experiencing some fantastic weather, low grey clouds, high winds, and a lot of rain fall. Just perfect for our high desert needs and our thirsty gardens, we won't have to dig out the hoses for a while.After lunch at Back Street Bistro - mmmm their Friday Matzo Ball Soup, with Charlotte and Joyce we wandered about Canyon Road seeing some of the openings before the crowds arrived. One memorable piece is McCabe by Linda Leslie (a friend) showing at Selby Fleetwood, also at Selby were some Hikaru dorodango - New Mexico Earthen Balls, the artist Bruce Gardner has utilized a methodology of compacting and drawing out the moisture to harden these pieces. They are finished in a very high luster and Charlotte and I both held one in our palms and experienced a vibration like feeling - believe me Charlotte is rarely susceptible to the (woo woo) as she calls it. Thereafter we were off to Santa Fe Clay for their artists show, including Steven Harrison's ox blood glaze birds which are beautiful, we took some time to visit with Geena Fowler and enjoyed looking through her esoteric and humorous clay creations.

Ok - FEASTS come fairly often in our circle of friends and family - with that said we all must self impose moderation. Not always the easiest thing to do, but oh so necessary in the larger scheme of things - like our health and well being. This year my Sister hosted T-day - her best Turkey to date - juicy and scrumptious. Bry with his new crock cooker, utilized it for the 5th time in as many days that he had it - for the Ham, MMMM was it great. Other favorites on the Menu - Nat's Famous Banana pudding with meringue, mothers home made yeast rolls(FAB). Of course we had to have the old staples - Broccoli Rice Casserole, Renee's super cranberries, Pinon Pie (which seems to be taking over) and our new cocktail this year was the Hurricane. Sangre De Cristo Aspens

Every autumn in Santa Fe there is a mass exodus up the Sangre De Cristo Mountains from Santa Fe. Also known as Hyde State Park and generally referenced in Santa Fe as the Ski Basin - this famous mountain range plays host to a spectacular show of nature. Easily seen from a 20 mile distance these trees turn a golden yellow with patches of red strewn in for drama (so it seems). It is many residents annual trek up into nature, it is always surprising as you begin driving up - within minutes you are in thick forest/woods. As you begin to approach the aspen groves it is impossible to refrain from ooooh and aaaaah - and thus begins ones fanciful journey into the show of the season. All it lacks really is the sounds of opera bellowing from the trunks of the trees as it seems each of these beautiful specimens is a Diva. And so it was this year, Gordon was only minutes off the plane from NYC and I was filling his ears with the beauty of what I wanted us to drive up and see. Later that week we found ourselves with lunch and cameras in tow emitting oooh & aaaah. Above are some of the pictures I shot that glorious day in Santa Fe.

Thanksgiving Comes Early in Albuquerque

Saturday night was a gathering of friends and family to celebrate Thanksgiving, hosted by Dennis and Myron. A true feast including Myron's Gratin potatoes, the best this side of the Pecos, the main was scrumptious pork tenderloin perfectly accompanied by a squash medley. One of our finales was Bryan's famous Pinon Pie (similar to a Pecan pie, but topped with Pine nuts). Many Spirits were flowing and much fun and laughter. We were all thankful to be together and for our many happy memories.

Autumn in New York

New York in October is Beautiful and one of my favorite times to be there - not to mention celebrating my birthday in the Big Apple - was a treat. Jay & Gordon hosted a most FABULOUS dinner party, we were surrounded by many good people. The menu included Boeuf Bourguignon served over egg noodles. In Jay's gastronomic expertise he tended this dish through several days of preparation - the boeuf was as tender as could be and the taste divine. Our finale was his home made Carrot Cake with cream cheese frosting - needless to say we were all in Gastronomic heaven. Thank you Gordon & Jay! During our time there we visited our favorite stomping grounds including the MOMA - had to see the new building. That is also where the Jaguar Roadster was on exhibition - I thought Dennis would LOVE it. The Met for their Dutch Masters Exhibition - visiting my old friends by Rembrandt's hand made me happy. Of course no visit would be complete without the visual pleasure of China Town's street markets - including a stop for lunch. While there we picked up three lobster for a mere $25 - eat your heart out Massachusetts. Jay again tantalizing our taste buds prepared lobster rolls and fried oysters that evening. WOW - they put smiles on our faces..... We are looking forward to our next visit already!

Kokanee Salmon

I thought I would share our fishing excursion (my first as an adult). It was Charlotte, Nathan and I - at Heron Lake(NM). The landscape was spectacular, as you can see from the images. Nathan dined on the Salmon and thought them delectable. The Kokanee are a land locked version of ocean dwelling Sockeye. Another factoid - is they are plankton eating - surprising from the look of their mouth and teeth. What a Great Day!
