Green Chile Stew Recipe
Home alone one night I decided to put together a Chile Stew for the following evenings dinner. One is always told that stews are always better the next day. This recipe is a combination of several peoples good stews plus my secret ingredient....
3 LBS - Chicken Breast
4 Small Snack Size bags of frozen chopped green chile (we process our own every year - but one can use what is readily available)
Salt, Pepper and garlic powder to taste
14.5 OZ can of crushed tomato
5-8 good sized potatoes
Two Boulillion Cubes (Poultry in this case)
Secret Ingredient :)
Begin with dicing the chicken into small cubes - using a Dutch Oven or deep pan(pot should be able to accomodate all ingredients) - Season the raw chicken with the garlic powder, salt and pepper - to your taste and brown. When the chicken has reached your desired state - add the diced potatoes(cut to your size preference) and stir thoroughly, to that add the thawed and diced green chile - once again stir thoroughly over the heat for approximately 30 seconds or more - followed by adding the can of diced tomatoes and its juice. Finally top off with filtered water to just above the top of your ingredients. Bring to a boil and add your bouillion cubes - lower the heat and simmer partially covered for approximately 1.5 hours or until your potatoes are tender and cooked.
I like to serve with warm flour tortillas. - ENJOY!!!!

Scottsdale/Phoenix
Gordon's show was very well received and we all had a good time.
This time we dined at Malee's (Four Times), The Rokery, Tico'z, & Oreganos. Oregano's as usual was FAB - the pizza is absolutely my favourite. Tico'z came highly recommended by Doug at The Royal Villa - the servings were gigantic, serivice was attentive and friendly - there is an attached bar - all very fun. The Rokery turned out to be very good, they were having a Dinner for two special - ours included a Porterhouse Steak - huge and juicy, accompanied by a potato suffle, and three veggies - and believe it or not it also included a Salad. When we got there - we were going to have to wait eventhough we had reservations - the owner was there and placed us in a private room - good friends, good food and lots of nectar flowing... Malee's this time proved to be our faithful and convenient restaurent - located on Main Street - Scottsdale and next door to the Gallery (Joan Cawley Gallery) - I will say that each time I had somthing different and each time it proved to be excellent - Excellent Shrimp Satay, The Pla - YUMM fish plate, Stir Fry. ONe evening we decided to share desserts - at Marilynn's insistence - WOW they were yummy my favourite was the Sticky Brown Rice with Custard -mmmmmmmmmmmmmmm
The night life too was decidely "amazing" - made new friends and enjoyed old ones.
Looking forward already to our next trip there.

Laguna Beach
Wow what a SUPERB day - with Bry, Trish and Lani - it began with a sunny warm day, a walk on the beach and meeting at the Crab Zone for lunch. Crab was had by all with Lani and Bry enjoying each a whole fresh dungeness crab - meticuliously prepared in a wok with crispy garlic and butter sauce.... WOW - they had their work cut out for them but they got through it. Trish and I settled for the King Crab Legs mmmmmmmmmmmmmm they sure know what they are doing. BUT it all began with Calimari and Oysters on the half shell - all excellent. Our entrees were accompanied with noodles - that seemed home made, the texture of each noodle smooth as butter...
We walked, talked, shopped and enjoyed our afternoon cocktails at Brussels Bistro - Bry and Lani couldn't resist some amazing desserts....
And finally a nice, peaceful walk on the beach at sunset....
What a day....

Leslie/Lohman Foundation - NYC
Gill-Tapia Studios is pleased to announce that the Leslie/Lohman Foundation - NYC recently accepted and placed into their permanent collection, four pieces from the "Masked Series". Donated by two important patrons of the arts from New York City/Santa Fe.
We are overjoyed with the news and look forward to seeing these pieces exhibited in their exhibition space.
We thank the Foundation and Patrons for their generosity.

Scottsdale/Phoenix
Our trip to Scottsdale/Phoenix was filled with constant activities - from the minute I drove in. Hanging the show at the gallery, Museums, Restaurants, Friends, Clubs - finally we (Dennis,Myron, Megan, Bryan, and I) escaped to Cave Creek and lunch at El Encanto - Everyone left with a very full tummy - YUMM.
Other Restaurants included Salt Cellar - Excellent Sea Food and Service, Wally's II with Dee and Jack - had a FAB Burger - Dee had amazing Ceviche, Oregano's - My favorite pizza in the US - that is for sure - and I have had allot - we lunched that day with Will, La Grande Orange - Bry and I did Breakfast - his Poached Eggs were very good - but my egg sandwich seemed like it was stored in the freezer before it was placed on my plate, Malees - many say best Thai cuisine in the Scottsdale/Phoenix area... I would have to agree - I liked that they offered everyone a specific spice level and finally Olive and Ivy - always love the atmosphere.

Happy New Year
The New Year was a busy one around Gill-Tapia Studios - between all the Holiday Parties and preparing for my show at Joan Cawley Gallery in Scottsdale.... There wasn't a minute to be spared. AND - WE got through it - the show was a success, my new works were met with high regard. The gallery has requested one of my large 8'X4' paintings.... I have my work cut out for me - as I plan on delivering it in March.
We intalled one of my pieces while in Scottsdale. The clients were absolutely kind and generous - the painting was placed in an important spot that no guest of theirs can possibly miss. It is an honor to be in such a noteworthy home and collection.
I'll be posting images from the last weeks over the next few days... and hope to get back to some recipes too.

The Museum located in Albuquerque, New Mexico is a Cultural Center and we are proud to be part of our States Heritage.
